Ingredients (Two portions)
- 100g Flour + Salt
- 50g Yam (if unavailable use flour)
- 2g Dried and smoked Bonito Flakes
- 100 cc Milk
- 150g Cabbage (diced)
- Corn
- Kimchi (if wanted)
- Spring Onion
- Cheese
- 6 Stripes of Bacon
- 4 Eggs
- 300g Noodles
- Yakisoba Sauce
- Okonomi Sauce
- Mayonnaise
Method
- Fry Noodles with Yakisoba sauce
- Mix flour, milk, yam and salt and put it aside
- Add cabbage, spring onion, kimchi (if using), two eggs and corn to the dough right before frying
- Heat the pan with oil
- When warm, put 1/2 of the dough into the pan to fry and shape it into a circle
- Place cheese onto the uncooked surface and put the other 1/2 of the dough to cover the cheese
- Fry for 6 minutes until golden brown
- When golden brown place the bacon onto the surface and flip the pancake onto the other side
- Poke some holes into the surface of the pancake with a chopstick
- Fry for another 6 minutes until golden brown
- Remove the pancake from the pan to fry the egg and place the noodles on the uncooked side of the egg
- When the egg is done place the pancake on top of the noodles
- Flip the whole modernyaki around
- Add some mayonnaise, okonomi sauce and bonito flakes on the egg side of the pancake
- Repeat with the other 1/2 of the dough
