Modernyaki - 摩登燒

  

Ingredients (Two portions)

  • 100g Flour + Salt
  • 50g Yam (if unavailable use flour)
  • 2g Dried and smoked Bonito Flakes
  • 100 cc Milk
  • 150g Cabbage (diced)
  • Corn
  • Kimchi (if wanted)
  • Spring Onion
  • Cheese
  • 6 Stripes of Bacon
  • 4 Eggs
  • 300g Noodles
  • Yakisoba Sauce
  • Okonomi Sauce
  • Mayonnaise

Method

  1. Fry Noodles with Yakisoba sauce
  2. Mix flour, milk, yam and salt and put it aside
  3. Add cabbage, spring onion, kimchi (if using), two eggs and corn to the dough right before frying
  4. Heat the pan with oil
  5. When warm, put 1/2 of the dough into the pan to fry and shape it into a circle
  6. Place cheese onto the uncooked surface and put the other 1/2 of the dough to cover the cheese
  7. Fry for 6 minutes until golden brown
  8. When golden brown place the bacon onto the surface and flip the pancake onto the other side
  9. Poke some holes into the surface of the pancake with a chopstick 
  10. Fry for another 6 minutes until golden brown 
  11. Remove the pancake from the pan to fry the egg and place the noodles on the uncooked side of the egg
  12. When the egg is done place the pancake on top of the noodles
  13. Flip the whole modernyaki around
  14. Add some mayonnaise, okonomi sauce and bonito flakes on the egg side of the pancake
  15. Repeat with the other 1/2 of the dough
